Patana merchants ltd, is engaged in agro-processing in the Kenyan macadamia nut market, having grown over the years, it has put up a state of the art facility located in Maragua, Muranga county.

Patana has installed a Napasol pasteurization line and put in place a robust food safety program to guarantee the microbiological safety of its macadamia nuts. The Napasol process ensures that the macadamias are pasteurized and safe to commercialize in customer markets with increasingly stringent microbiological safety standards.

The pasteurization process has undergone microbiological validation to demonstrate controlling risk of salmonella by achieving a >5 log reduction from style 0 to style 6.

The pasteurization process takes place in a partial vacuum in which steam pressure is precisely controlled to maintain saturated steam conditions. The superior heat transfer capability of saturated steam provides high microbiological lethality at a relatively low temperature with short treatment times.

This feature of the Napasol process is particularly beneficial when pasteurizing raw nuts, whole flavor, color and nutritional composition won’t be negatively impacted by excessive exposure to heat.
